For an excellent grounding in the subject I'd recommend,

Principles of Protein X-ray Crystallography by Jan Drenth

Amazon UK Amazon USA

I like the book recommended by Richard Taylor too. There is also

Protein Crystallography in Drug Discovery (Methods and Principles in Medicinal Chemistry)

by Robert E. Babine, Sherin S. Abdel-Meguid, Raimund Mannhold, Hugo Kubinyi, Gerd Folkers

ISBN: 3527306781

It's just over a year old, so its quite up to date.

My favorite is also Drenth, but some find it too mathematical. Crystallography Made Crystal Clear by Gale Rhodes is what most beginning students like best.
