I am not sure if there are microarray systems available for pig or cow but Biosource International (800.242.0607) has a wide range of individual cytokine ELISA for swine(pig).

It might also be worth considering devoloping your own assay with defined commercial reagents. If you can find 2 antibodies that have sufficient cross-reactivity, then setting up your own ELISA is not too difficult.
