Which is the sort after enzyme now? Which enzyme is hard to find/isolate? Which enzyme needs more work?

I think you need to provide a little more context for your question.
Are you referring to an enzyme that could be of therapeutic benefit in the treatment of diseases such as cancer?
Or are you referring to an enzyme that could be of commercial use - e.g something the prolongs the shelf life of foods?

I am looking for an enzyme

I am looking for an enzyme that would have commercial value and one that is not so much worked on. There seems to be so much info on just about every enzyme of some industrial use. I am not so much interested on ones with clinical value but would be if it is of microbial origin.
